The beluga caviar comes from a species of prehistoric fish knows as the beluga sturgeon (Huso Huso) .
Native to the Caspian sea.
These fishes are one of the oldest survivors of the dinosaur era and have lived for hundreds of years.
It is also the largest among its species and is so rare that only approximately 100 fishes are caught every year .
This particular sturgeon takes up to 20 years to reach maturity level and the eggs from the beluga sturgeon comes in a variety of colors .
Ranging from the lightest of blues to black .
The lightest colored ones are more expensive since they are harvested from older fishes .
The beluga caviar is only exported by IRAN and RUSSIA .
Where the ones from Iran are highly sought after due to the harvesting from the southern part of the Caspian sea .
